Sometimes I remember I have free will and can just put things together that I think sound good.

Crusty Italian pane, provolone(not smoked), a nice crumbly aged cheddar, cream cheese with a bit of hot pepper jelly mixed in. Delicious. Can’t get enough. The crust is where I got a little weird. I am a staunch mayo on grilled cheese hater. But, I love a good mustard. I did roughly equal parts mayo/dijon on the bread and I am a changed woman. The crunch. The tang. The FLAVOR. 12/10, may not be going back to butter for the foreseeable future.

    Mustard flavor goes so well with cheesiness. I like to put a dab in my mac and cheese as well.

  2. When I was growing up, and my mom made grilled cheese with American cheese slices on white bread, she always added mustard. Which was interesting to me, because it was the only sandwich she made for us that had mustard (not on any lunch meat sandwiches). I never want mustard on a diner style grilled cheese, but on the basic ones I make like mom did, there’s always a little mustard, because the plain American cheese needs the little tang.

    I was talking to one of my sisters about it a few years ago, and she told me she hated it. She would hide grilled cheese whenever my mom made it.

    This is how I do my grilled cheese.  Caramelized mustard just tastes soooo good.

    I’m about to the point I start eating my dijon straight out of the bottle with a spoon. So fantastic with anything it’s paired with.

  8. Yes, putting a very light smear of Dijon on the inside of the bread is sooo good. I like using it with Boars head onion jack cheese. Omg bro. 🫠

    Interesting! I always put a light spread of mustard on the inside of my GC. Löwensenf Dark Green is my favorite by far. 🙂

    I’ve just recently become a mayo convert. Now I HAVE to try the mayo/mustard combination. This sounds really great!
